- 1 cup bread crumbs
- 1/2 cup rolled oats
- 1/4 cup chopped fresh parsley
- 1 tablespoon soy sauce
- 1 tablespoon olive oil

For Assembling the Burgers:
- 4 whole wheat burger buns
- Lettuce leaves
- Sliced tomatoes
- Sliced red onions
- Sliced pickles
- Vegan or regular cheese slices (optional)
- Ketchup, mustard, or your favorite burger sauce
Instructions
-
Prepare the Patties:
- In a large bowl, mash the black beans and chickpeas using a fork or potato masher until they form a coarse paste.
- Add the chopped onion, minced garlic, grated carrots, bread crumbs, rolled oats, and chopped parsley to the bowl. Mix well.
- Add the soy sauce, olive oil, ground cumin, paprika, salt, and black pepper. Mix until all ingredients are well combined.
- Add the egg (or flax egg) to the mixture and stir until the mixture is moist and holds together.
-
Form the Patties:
- Divide the mixture into four equal portions and shape each portion into a patty about 1/2 inch thick.
-
Cook the Patties:
- Heat a non-stick skillet over medium heat and add a small amount of olive oil.
- Cook the patties for about 5-7 minutes on each side, or until they are golden brown and firm. If using cheese, add a slice on top of each patty during the last minute of cooking and cover the skillet to melt the cheese.
-
Assemble the Burgers:
- Toast the burger buns lightly if desired.
- Place a lettuce leaf on the bottom half of each bun, followed by the veggie patty.
- Top the patty with slices of tomato, red onion, and pickles.
- Add any additional toppings or condiments you prefer, such as ketchup, mustard, or a special burger sauce.
- Place the top half of the bun on the burger and serve immediately.
