What happens if you don't like the wine after tasting it? You might ask for a glass of something else—and there's a chance your server might comp that glass in some cases. But if you order another bottle of wine, you should expect to pay for it. I've never personally sent back a bottle I didn't like unless it was flawed, but once one of my dinner companions did.
