How intense is Star Wars Smugglers Run? Not the best run, not the worst. Riding the Falcon isn't as bumpy as Star Tours, but it is still a motion simulator. If you're prone to motion sickness you may want to ask for the engineer position. I was told by friends that it was the position least likely to experience any motion sickness, and they were right.
Does rise of the resistance jerk you around?

It's not scary at all -- the biggest thing is motion sickness with the movements of the simulator. That being said, if you were OK with the old Star Tours, you'll be fine with the new one. If you do get scared from the visual effects, you can always close your eyes for the remainder of the ride.
